Starting yesterday, August 13, 2017, I’ll be 12 months away from everything I’ve ever known. In an attempt to understand, or at least appreciate this wild adventure, I’ll document each host culture through the lens of their food. I want to know what lingers from the kitchen greeting them in the morning, what lurks in their markets and the magic mixture of smells it creates, how they experience a meal and with whom, how they feel about what’s on their plate and the memories behind it.
